The versatile tri-tip from the buffalo, also known as the mayor's piece, is ideal for smoking, stewing or short roasting. In this recipe, the extremely delicious cut was indirectly grilled on a bed of hay and herbs.

preparation
- First, the tri-tip is removed from the packaging, washed off cold and patted dry.
- Now you put the piece in the garschale filled with the herb hay and heat the grill to approx. 160-180 degrees, with an indirect zone being established for the garschale. Alternatively, an oven can be used.
- The Tri-Tip is now wired with a core temperature thermometer (Grill Eye) and placed in the indirect zone of the grill in the garschale.
- As soon as the core temperature reaches around 40 degrees, you take the tri-tip out of the garschale and grill it briefly on both sides in the direct area of the grill. If the preparation has taken place in the oven, this step can be carried out, for example, in a hot cast iron pan.
- After grilling the outside, you let the tri-tip rest briefly, then cut it into fine tranches and finally arrange it on a little colorful salad.
