The versatile buffalo tri-tip, also known as the mayor's cut, is ideal for smoking, braising, or even pan-frying. In this recipe, this delicious cut was indirectly grilled on a bed of hay and herbs.
ingredients
- buffalo Tri-Tip / Mayor's Piece by Buffalo Bill
- Hay cooking bowl from Axe blow
preparation
- First, the tri-tip is removed from the packaging, washed with cold water and patted dry.
- Now place the piece in the cooking tray filled with herbal hay and heat the grill to approximately 160-180 degrees Celsius, setting up an indirect cooking zone for the cooking tray. Alternatively, you can also use an oven.
- The Tri-Tip is now wired with a core temperature thermometer (Grill Eye) and placed in the indirect zone of the grill in the garschale.
- Once the internal temperature reaches approximately 40 degrees Celsius, remove the tri-tip from the cooking tray and briefly sear it on both sides in the direct vicinity of the grill. If it was cooked in the oven, this step can be performed in a hot cast iron pan, for example.
- After grilling the outside, you let the tri-tip rest briefly, then cut it into fine tranches and finally arrange it on a little colorful salad.
