Behind Büffel Bill is the founder Manuel Ruess and his team. Our vision is to introduce consumers to a conscious enjoyment of meat. In our production, we follow the "nose-to-tail" principle by trying to use the entire buffalo. We don't like to talk about prime cuts, because in our opinion, every piece of meat is equally good if you know how to prepare it.
