The unique emergence of Buffalo Bill

A sustainable success 

The story of Buffalo Bill begins with a newspaper article. The two founders, Manuel Ruess and Martin Jaser, learn that only female water buffalo are valuable for the production of buffalo mozzarella. Their male counterparts are either killed after birth or kept in horrific conditions. The good news: These poor animals would finally find their saviors in Manuel and Martin. Full of energy, the two set about making buffalo meat popular and desirable in Germany. Their idea was as simple as it was ingenious: By increasing the demand for buffalo meat, they created a world in which raising male water buffalo was also worthwhile.

How good that Manuel had already completed a commercial traineeship at a supermarket, while Martin grew up in a butcher's family and thus gained extensive experience in meat processing during his youth. Now that's the perfect combination! They both also had business degrees, which further inspired their founding of a buffalo meat startup.

The search for the best partners

And then, in 2016, Buffalo Bill was finally launched. But there was one thing that Manuel and Martin had no idea about at the time: How do you actually find buffalo breeders who are willing to to meet the high standards that Buffalo Bill promises its customers? It really wasn't easy, but they finally made it! In Germany and Italy, they found partners who truly know how to make buffalo happy.

The Italian buffalo live on the beautiful Amalfi Coast and feast on fresh grass and herbs year-round. The result? Tender meat with incredible flavor. The German buffalo, on the other hand, graze on pastures that seemingly stretch into infinity, which gives their meat a mild, nutty flavor. 

Just at the beginning

Büffel Bill has now made a name for itself and is known for its first-class quality and commitment to sustainability. And despite all the challenges brought about by the Covid-19 pandemic, Manuel Ruess – now without Martin – remains firmly at the helm.
