Buffalo cannelloni from the Dutch oven

Büffel Cannelloni aus dem Dutch Ofen

Delicious buffalo cannelloni from the Dutch oven. Buffalo ground meat in a delicious tomato, onion, and pea sauce – baked in the hot embers with cheese.

INGREDIENTS

  • 1.5 kg Buffalo mince
  • 250g peas
  • 150g cheese for gratin
  • 750 ml tomato sauce
  • 3 Tomatoes
  • 3 small onions
  • 75g Fresh cream
  • 5 tbsp Spice to taste
  • 1.5 tsp salt
  • 1.5 packs of cannelloni

PREPARATION

  • First, sear the buffalo ground beef with the finely chopped onions. Since the meat will continue to cook in the Dutch oven, sear it only briefly.
  • As soon as the first roasted aromas have developed, deglaze the minced meat with the tomato sauce, add peas, diced tomatoes and spices and bring to a boil briefly.
  • Now fill the cannelloni with the sauce, layer them in the Dutch oven, and top with a little more sauce and crème fraîche. Repeat this process until the cannelloni and sauce are completely used up. Finally, spread the cheese on the cannelloni and close the lid of the Dutch oven.
  • Finally, cover the Dutch oven with charcoal, briquettes, or hot embers from the fire. It takes about an hour for the cannelloni to cook completely, although you may need to add a little more embers toward the end. The buffalo cannelloni from the Dutch oven are ready.

Enjoy your food!

Many thanks to BBQ world champion and food blogger Camillo “Don Caruso” Tomanek for the recipe and photography.
