We had a wonderful conversation with Ludwig from Neue Meere about the sustainability of his shrimp farming. This also gave us the idea of working together to create a Surf & Turf Box. 

But before we rave about our new delicatessen box, let's talk about how we fish the shrimp.

The shrimp are caught fresh daily to customer order. This takes place in six saltwater tanks spread over two floors. The tanks each hold 115,000 liters of water and are 19 meters by 4 meters in size. The water level is 1.5 meters. Once the shrimp are added, each tank contains approximately 100,000 to 150,000 shrimp.

To catch the shrimp, a trawl net is first spread out in the respective tank and pulled through by Tarek and production employee Henning from one end of the tank to the other.
The shrimp collected are then fished out of the trawl net using a landing net. 

After several net-netting operations (varies depending on stocking density), the trawl net is emptied and the tank passage with the trawl net is repeated several times depending on the required amount of shrimp.
After being caught with a net, the shrimp are placed in a tank of warm plant water and then transported for electrical stunning. After stunning, they are immediately placed in ice water. The killed shrimp are then further processed with ice constantly added to maintain the cold chain.
Further processing consists of washing, weighing, packaging and vacuuming the shrimp.

If customers request "easy peel" (headless) or "ready to cook" (fully deveined and peeled) shrimp, the shrimp are additionally peeled or deveined (in parts). They are then refrigerated and delivered to our customers within 24 hours.
