Sicilian buffalo casserole from BBQ world champion Camillo "Don Caruso" Tomanek. During the long cooking time in the Dutch oven, all the flavors unfold, creating a truly special taste experience!
INGREDIENTS
For 2 PERSONS:
- 500g Büffelfilet Steaks oder Büffel Hüftsteaks
- 500g of transpired tomatoes
- 6 cloves garlic
- Salt
- Pfeffer
- Oregano
- olive oil
PREPARATION
- First, mix the pureed tomatoes with the chopped garlic. You can use more or less garlic, depending on your taste.
- Then you fry the maximum 0.5 cm thick buffalo meat slices and season them on both sides with salt, pepper and oregano.
- The next step is to layer the meat in a Dutch oven or, alternatively, a traditional casserole dish. Add 2 tablespoons of olive oil and enough tomato sauce to completely cover each layer of meat. Finally, you can add 1/3 glass of red wine.
- Now, cover the Dutch oven or casserole dish with the lid and place it in the embers or, alternatively, in the oven. It's important to only bring the pot to a boil once and then simmer it on low heat for 3-4 hours.
- When it comes to side dishes, you can really indulge in your own taste. We enjoy the Sicilian buffalo casserole best with high-quality pasta, bread, or spaetzle.
