Sicilian buffalo stew from BBQ world champion Camillo “Don Caruso” Tomanek. During the long cooking time in the Dutch oven, all the aromas unfold and provide a very special taste experience!
INGREDIENTS
for 2 people:
- 500g buffalo fillet steaks or buffalo rump steaks
- 500 g strained tomatoes
- 6 cloves garlic
- Salt
- Pfeffer
- Oregano
- olive oil
PREPARATION
- First, mix the strained tomatoes with the chopped garlic. Depending on your taste, you can use more or less garlic.
- Then fry the buffalo meat slices, which are no more than 0.5 cm thick, and season them on both sides with salt, pepper and oregano.
- In the next step, you layer the meat in a Dutch oven or, alternatively, a classic casserole dish. Add 2 tablespoons of olive oil and enough tomato sauce to each layer of meat to completely cover the meat. Finally, you can add 1/3 glass of red wine on top.
- Now close the Dutch Oven or Cover the casserole dish with the lid and place it in the embers or alternatively in the oven. It is important to only bring the pot to the boil once and then let it simmer at low heat for 3-4 hours.
- When it comes to side dishes, you can choose whatever suits your taste. We like to enjoy the Sicilian buffalo stew with high-quality pasta, bread or spaetzle.
